Snack on Plants This Week

Are you vegan, vegan-curious, or maybe a lover of all foods? This week, June 9th – June 15th, select Bellingham restaurants and food trucks will be featuring delicious 100% plant-based options on the menu for Vegan Restaurant Week, sponsored by Bellingham VegFest.

Check out these “TOFU “CHAR SIU” BAO” 👇️ from Redlight Kitchen & Bar. That’s enough to get the mouth watering.

There’s a map of participating restaurants on the Bellingham Veg Fest website with photos and printable food guide. See you out there!

Thoughts on Slothy

Mikayla King, Western grade and writer for the WWU University Communication team, published a lovely take on Bellingham’s unique sloth mascot in her article “Why has the I-5 Sloth become the symbol of the city?” including thoughts from Assistant Professor of Anthropology Natalie Baloy.

“In some ways, Slothy is an apropos mascot for the City of Subdued Excitement. While the animal itself has no relevance to this place, its ecosystems or Indigenous cultures here, the sloth is certainly subdued and its sightings exciting.” Professor Baloy continued “…cheering for Slothy has become an anti-establishment gesture since WSDOT removal and the sloth’s return.” Be sure to read the article for Natalie’s full quote and Mikayla’s background on this fun story. 🦥

In other news…

🚚 Food truck people!! The City of Ferndale is looking for food trucks to be part of their Summer of Fun season! If you're ready to serve up delicious eats and be part of the community excitement, they want to hear from you. 😀
